Who knew that the only ingredient needed to make coconut butter goodness is 3 heaping cups of unsweetened shredded coconut?
(This ingredient is available in the bulk section of Wholefoods.)
Process the shredded coconut in a food processor for 10-15 minutes until smooth. Store in a jar at room temperature.
I love having this on my toast, we use it as a pancake filling in our weekend brunch ritual!, I eat it with fruits, or straight from the jar!!!

Makes 3 1/2 Cups
2 Cups Raw Cashews (soaked overnight in room temperature)
1/2 Cup Maple syrup
3/4 Cup Raw Cacao powder
4 Tbsp. Coconut oil
1 1/2 Tsp. Ground Cinnamon
2 Tsps. Vanilla extract
1/2 Cup Coconut Flakes
1/2 Tsp. Real salt
In a food processor, mix all the ingredients and process until smooth.
